Rules of thumb. Fish the lightest line the cover allows for more bites; step up for teeth (wire or heavy fluoro), abrasion (rocks, oysters, snags) and big fish. A leader should be as tough as or tougher than the main line wherever a fish can cut or wear through. Check the last metre of line for nicks after every fish and re-tie if in doubt.
